Ever since my sister and I ate the Chocolate Orange Cupcakes made with Terry's chocolate orange on New Years Eve, she has fallen in love with Terry's Chocolate Orange all over again. The makers have delighted her with the many ways Terry's Chocolate Orange has been reproduced and marketed. Did you know there's even an ice cream version?!
Anyway, my sister's birthday (yes, another January born sister!) called for a special creation dedicated exclusively to her - soft and pillowy chocolate orange cookies made with none other than Terry's Chocolate Orange! As you may rememebr, there's only one year in age between my sister and I. When I look at her, I can still see her as a small girl, fiercely independent, bossy (she'll hate me for that!) but above all with the most kindest and generous heart that she still has today. I found this quote from a sisters book that she once gave me which sums us up:

Although I don't think I could have created these cookies aged 6!
200g plain flour
1tspn baking powder
120g unslated butter
100g caster sugar
100g light brown sugar
1 large egg, at room temperature
1tspn vanilla extract
225g Terry's Chocolate Orange, chopped into chunks
Preheat the oven to 170C and line a couple of trays with parchment.
Sift the flour, baking powder and salt. Keep to one side.
Cream together the butter and sugar for about 3 minutes either in a free standing mixer or in a bowl using a hand held electric mixer.
Add the egg and vanilla extract.
With the mixer on the lowest setting, add the flour, baking powder and salt. Beat until just combined.
Using a spatula, stir in the Terry's Chocolate Orange.
Make balls out of tablespoons of the dough and place on the baking sheets. (The dough will be a little sticky).
Bake for 12 minutes. Allow the cookies to cool for 5 minutes on their trays before carefully moving them on to wire racks to completely cool.
Yield: A baker's dozen!
You can use a combination of Terry's milk, dark or white chocolate. I used a combination of milk and white chocolate!
If you want to embellish these cookies further, you could add nuts, brazil, hazelnuts, walnuts or almonds - take your pick. Simply add 150g Terry's Chocolate and 75g nuts.
