M&M Oat Cookies

Valentine's Day always has a special place in my heart as in the early years when we got married my husband always made more of an effort on Valentine's Day than he did for our wedding anniversary! Later when our children arrived, I realised that Valentine's Day was not only for the two of us but for all of those whom we love who are close to us.

Wishing you all a Happy Valentine's Day surrounded by all your loved ones with these M&M Oat Cookies:

This recipe will  bake you around 14 cookies (more if you make your cookie balls smaller).

115g butter (at room temperature and softened)
150g dark brown sugar
50g sugar
1 large egg
2 teaspoons vanilla extract
140g oats
125g plain flour
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
160g M&Ms

Cream together the butter & sugars for 2 minutes.

In a separate bowl whisk together the flour, oats, baking powder, salt & cinnamon.

Add the egg and vanilla to the butter and sugar mix. Once it's all incorporated slowly add the dry ingredients.

Gently fold in the M&Ms and chill the dough in the fridge for at least 30 minutes.

Once you are ready to bake, take a tablespoon of dough and  place on parchment lined trays. Remember to stick some extra M&Ms on to the cookie balls to make them look even more tantalising.

Bake at 160C for 10-11 minutes.

Recipe from Sally's Baking Addiction and can be found here.

Baking Notes:

The cookie balls can be frozen and the baked cookies can be frozen too.
