Did I ever tell you that it was my finding the perfect Chocolate Brownies recipe that reignited my dormant love of baking? As I have mentioned before, being able to make gorgeous, gooey brownies can bring you and a lot of other people a whole lot of happiness. That may be hard to imagine but in my experience definitely true!
Needless to say, whenever I see a new recipe for brownies my Brownie Antenna goes up and that's what happened when I saw this recipe for Dulce de Leche Brownies. The only special ingredient that you will need is this, a can of Carnation Milk with Caramel.

141g dark chocolate chips/chocolate pieces roughly chopped
227g unsalted butter
402g caster sugar
4 large eggs, at room temperature
144g plain flour
1 tablespoon vanilla extract
200g of carnation milk with caramel (about half of the can)
Pre heat your oven to 160C and grease and line with parchment paper an 8x8 inch baking tin.
Melt the chocolate in a bowl over a pan of simmering water and then set it aside to cool.
Sift the flour and also set aside.
Beat together the sugar and the butter for about 3 minutes until soft and fluffy.
Add the eggs one by one, making sure each is incorporated before adding the next.
Add the vanilla and slowly pour in the melted chocolate.
If using an electric mixer, reduce the speed to the lowest setting and add the flour.
Pour the mixture into your prepared tin.
Gently warm the caramel in the microwave for up to 1 minute in short bursts and place blobs of it on top of your brownie mixture.
Take a long skewer and gently swirl the caramel through the mixture.
Bake in the oven for approximately 45 to 55 minutes until there is only a slight wobble. Remember that the brownies will continue to cook as they are cooling.
Allow the brownies to cool completely before cutting into squares. Serve on their own piled high in true Nigella style glory with a dusting of icing sugar or you can have on standby ice cream not forgetting that you can warm the remainder of your can of caramel to drizzle over too. Pure Bliss!
