There's not really much more I can tell you about this cake, other than this is one of those times when less really is more.
This recipe will make either 10 mini cakes or one 8 inch cake.
6oz self raising flour
5oz caster sugar
1oz dedicated coconut
4oz glacé cherries, chopped into small pieces
Pre heat your oven to 170C.
Grease your mini loaf tins or line an 8 inch cake tin.
Sift the flour.
Beat the butter and sugar together until smooth and creamy.
Add the eggs one by one, making each is fully mixed in before adding the next.
Reduce the mixer to its lowest setting and add the self raising flour.
Using a spatula, mix in the cherries and coconut.
Divide the mixture between the loaf tins or pour into your cake tin.
Bake the mini cakes for 18-20 minutes and if baking the cake, bake for 20-25 minutes.
PS: Do you think that if the cakes are loaf shaped you can justify having one for breakfast??!
